Kind of Sushi

Who doesn't know about Sushi?
If we talk about Japan's food, we'll directly think about Sushi right??

Well, in this blog, I'll talk about some information about sushi.

What is Sushi?
People usually thinks that Sushi equals raw fish, but the raw fish is actually sashimi, not sushi. But sashimi can be the topping or filling for sushi. According to Celeste Heiter in his book The Sushi Book, the word "sushi" actually refers to the sticky, vinegared rice that is its essential component.



Variant of Sushi
There are a lot of kinds of sushi. According to Chef Tio, from Sushi Tei, Central Park Jakarta, there are four kind of sushi:

Nigiri Sushi
Nigiri Sushi is a kind of sushi that have toppings on the rice ball. There are some toppings of sushi that can be used, but there are some toppings that being common to be used according to Aya Imatani as written on her book Sushi: The Beginner's Guide.

Maguro Nigiri Sushi
Maguro is Tuna.

Ebi Nigiri Sushi
Ebi is Shrimp.

Unagi Nigiri Sushi
Unagi is Ell.

Gunkan Sushi
Gunkan its self refers to tank ship. So the shape of the sushi looks like gunkan. The rice ball is wrapped around by nori and the filling on the top. There are some toppings of sushi that can be used, but there are some toppings that being common to be used according to Aya Imatani as written on her book Sushi: The Beginner's Guide.

Ikura Gunkan Sushi
Ikura is Caviar or Roe.

Ebikko is Shrimp Roe and Tobiko is Fish Roe

Maguro is Tuna.

Kani is Crab

Temaki Sushi
Temaki refers to Te (手) means hand; and Maki (巻き) means roll. So, Temaki Sushi is hand-roll sushi which the rice and the fillings are rolled by nori. The toppings are variant, they can be ikura (caviar), tuna paste, crab stick, avocado and so on.

Makimono Sushi
Makimono refers to Maki (巻き) means roll; and Mono (物). So, Makimono sushi is rolled sushi with the rice, fillings and nori. There are three types of Makimono Sushi.

Uramaki Sushi
Ura means inside, so the nori is inside of the rice. For the example, we know California Roll. It's the well-known example of Uramaki Sushi.

Hosomaki Sushi
Hoso is from the word hosoi (細い) in Japan that means narrow. So, Hosomaki Sushi is narrow-rolled sushi. Usually, Hosomaki Sushi is filled by single filling or one variant filling. The fillings are variant, can be tamago (egg), salmon flesh, avocado, etc.

Futomaki Sushi
Futo is from the word futoi (太い) in Japan that means thick. So, Futomaki Sushi is thick-rolled sushi.  Usually, Futomaki Sushi is filled by many fillings or more than one variant fillings.
